Pumpkin Pie #1 - no bake

Ingredients:

1 large package of vanilla instant pudding (or 2 small ones)
1 can of evaporated milk (1-1/2 cups)
1 can pumpkin (15 oz)
1 tsp pumpkin pie spice (or 1-1/2 tsp for more flavor)

 

 

Preparations:

Beat pudding and evaporated milk in a large bowl according to package.
Refrigerate for 5 minutes.
Add pumpkin and spice, mix well.
Spoon into dessert dishes and refrigerate.

For a pie:
Pour into a crumb crust and refrigerate until setup. (about 4 hours)

Top with cool whip.

Pie variation:

Mix until smooth
4 oz of cream cheese (1/2 of 8 oz bar)
1 tbls milk
1 tbls sugar
add
4 oz of cool whip ( 1/2 of 8 oz container)

Spread into crumb crust and top with above mix.
Use only 1 cup milk instead of 1-1/2 cups.
