Cheesecake a la Lindy

Ingredients:

Crust-

3/4 cup flour
1/4 cup sugar
1/4 cup butter, softened
1     tsp lemon rind, grated
1/2 tsp vanilla extract
1     egg yoke

Filling-

5        packs (8oz) cream cheese, softened
1 3/4 cups sugar
1/4    cup whipping cream
3       tblsp flour
2       tsp lemon rind, grated
2       tsp orange rind, grated
1       tsp vanilla extract 
6       eggs

 

 

Preparations:

Crust-

Butter a 9 x 3 spring-form pan.
Remove ring from bottom and set aside.
Combine crust ingredients in bowl and shape into ball.
Put half on pan bottom and cover with waxed paper.
Roll crust to edge of pan and remove paper.
Bake at 400 F oven for 6 to 8 minutes or until lightly golden.
Cool and assemble pan.
Pat remaining dough around edge of pan to within
1 inch of top. Set aside.

Filling-

Beat all ingredients except eggs together until fluffy.
Blend eggs in one at a time. Pour into pan.
Bake in preheated 400 F oven for 10 minutes.
Lower heat to 250 F and bake for another 1 hour.
Cool in pan on a rack for 2 hours. Chill 3 hours or overnight.

 

 

Toppings

Top with favorite flavors or plain.
